"Gimme Thrive" Eggnog Cookies

Most of my family loves eggnog, so finding an eggnog-ish cookie recipe was a fun discovery that we've come to love (most of us....still have an eggnog-hating child).

I thought I'd try using the Thrive Vanilla Sugar Cookie Mix with it and see how it turned out.

LOVE IT!

But really, you can use any sugar cookie recipe or mix.  Just add in the rum extract and nutmeg to the dough before baking and mix it in well.  Still why not use a mix that's ready to go and sooooo delicious!

Enjoy!!



Ingredients:
3/4 c. butter
1 egg
2 tbsp. water
1 tsp. rum extract
1 tsp. nutmeg
3 1/3 c. THRIVE Vanilla Sugar Cookie Mix

Glaze
4 tbsp. butter, melted
2 c. powdered sugar
1/2 tsp. rum extract
2 tbsp.water

Directions:
Preheat oven to 325 degrees.
Cream the butter in a mixer. Add in the egg, water, nutmeg, and rum extract. Scrape down sides of bowl. Add cookie mix and mix until well blended.

Drop cookie dough by small cookie-scoopfuls onto ungreased cookie sheet. Bake for 10-12 minutes, or until edges just start to turn golden. Remove to rack to cool completely.

Glaze: Combine the glaze ingredients and whisk well to create a smooth glaze. Pour by teaspoonfuls onto cooled cookies. Dust with a little nutmeg, if desired.

Recipes for Meals-in-a-Jar Packs--Black Friday Sale!


Black Friday means awesome savings!!  And it's a great time to order supplies for jar meals, whether you're making them for yourself so you can have quick meals during this busy holiday time OR making them to give as gifts this holiday season!

PC=pantry can
#10=#10 size can/family size
FD=freeze dried

You can easily use half of a recipe for a pint jar, which is perfect for those only needing to cook for 1 or 2.  Each quart jar meal serves about 4 people, depending on serving size.  You can layer the ingredients in canning jars (they look really great that way and are the best way to gift them).  Or you can put them in ziploc bags!

All of the recipes below are very popular with my customers and are favorites among my fellow Thrive consultants!  There are a few non-Thrive ingredients in each recipe, but you likely have those in your pantry already!


TACO SOUP by Melissa Coombs

Put in quart jar in this order:
3 Tbsp. taco seasoning
½ tsp. salt
¼ tsp. black pepper
3 Tbsp. THRIVE Tomato Powder
¼ cup THRIVE FD Chopped Onions
¾ cup THRIVE FD Ground Beef
¾ cup THRIVE Instant Pinto Beans
¾ cup THRIVE Instant Black Beans
¾ cup THRIVE FD Sweet Corn
2 Tbsp. THRIVE FD Green Chilies

To prepare:
Dump all into a pot with 8 cups of water (more or less can be used depending on your preference). Bring to a boil, reduce heat and simmer for 10-15 minutes or until beans are cooked through. Serve with sour cream, shredded cheese, tortilla chips, etc.

BEEF STROGANOFF by Shelli Rasmussen

Put in a quart jar in this order:
 1 cup FD Beef Dices or Ground Beef
2 cups Egg Noodles (you can also buy curly egg noodles at your grocery store)
1/3 cup Espagnole (Savory Beef Gravy)
1/4 cup FD Chopped Onions
1/4 cup Sour Cream Powder
1 tsp Chef's Choice Seasoning Blend
1 tsp Garlic Powder
1 1/4 TBSP Salad Seasoning Blend

To prepare:
Bring 5 cups of water to a boil. Pour contents of jar in the water. Let return to full boil. Reduce to medium heat and simmer for 12-15 minutes or until noodles are done. You may need to add in a little more water as it is cooking- it will depend on what kind of noodles you used and how many you crammed in to your 2 cups! : ) Cover and let sit for 8-10 minutes before serving.

CHICKEN FAJITAS

Put in a quart jar in this order:
 1 1/4 cups FD Seasoned Chicken Slices
3/4 cup FD Onion Slices
1/3 cup FD Green Chili Peppers
1/2 cup FD Green Bell Peppers
1/2 cup FD Red Green Peppers
1/2 tsp Chicken Bouillon
1 tsp FD Cilantro
1/2 tsp Chef's Choice Seasoning
1 tsp Chili Powder
1/2 tsp Cumin
1/4 tsp Garlic Powder
1/2 tsp Salt (or less if you prefer)
A Pinch of Thrive Limeade Powder (or squeeze some fresh lime over chicken fajitas before serving.) 

To prepare:
In a bowl, add contents of jar to 2 cups of hot water and let sit for 10 minutes, stirring occasionally. You want to make sure the chicken peices have absorbed the water. There may be a little water in the bottom of the bowl after the 10 minutes and that's ok. Add 1 TBSP of olive oil to a skillet and get it hot. Pour in chicken mixture and stir to lightly brown the chicken and heat completely. Serve on flour tortillas (or in romaine lettuce leaves) with your favorite toppings, like cheese, sour cream, salsa, guacamole, etc.

FRANCESCA'S UNSTUFFED PEPPER SOUP by Francesca Hutchinson

Put in quart jar in this order:

 ½ tsp Salt
¼ tsp Pepper
½ cup Tomato Powder
1 tsp Freeze Dried Garlic (can use ½ tsp garlic powder instead)
1 TBSP Italian Seasoning
1 ½ TBSP Beef Bouillon
¼ cup Freeze Dried Onions
1 cup Instant White Rice or Instant Brown Rice
1 cup Freeze Dried Ground Beef
½ cup Freeze Dried Red Peppers
½ cup Freeze Dried Green Peppers

To prepare:
 Dump all ingredients from this jar into a pot. Add 8 cups water (you might like more or less water). Bring to a boil, turn down to medium heat and let simmer for 10-12 minutes. Add more salt or seasonings if you like. Serve topped with your favorite cheese.

This is also amazing as a casserole. Francesca's original recipe said to dump contents of jar into a bowl and add 3 cups of water. Let sit for 20 minutes to rehydrate. Pour into a casserole dish and top with cheese. Bake at 350 degrees for 20-25 minutes.


SAUSAGE ZUPPA TOSCANA

Put in quart jar in this order:
 ½ cup Sour Cream Powder
1 TBSP Chicken Bouillon
½ tsp Crushed Red Pepper
½ tsp Freeze Dried Garlic (or use some garlic powder instead)
½ cup FD Chopped Spinach
¼ cup Freeze Dried Onions
1 cup Instant Pinto Beans
1 cup Freeze Dried Sausage Crumbles
1 ½ cups Potato Chunks (dehydrated)

 To prepare in a crock pot, add soup to 8 cups of water and cook on low for 4 hours. Serve with freshly grated Parmesan cheese and bread sticks.

 To cook in a pot, dump all ingredients of this jar into a pot. Add 8-9 cups of water. Bring to a boil, turn down to medium heat and let simmer for about 20 minutes or until potatoes and beans are tender.


LASAGNA SOUP by Shelli Rasmussen

Put in quart jar in this order:
 ¼ cupTomato Powder
¼ cup Tomato Sauce Powder
1 TBSP Chicken Bouillon
¼ cup Bechamel Sauce
½ - 1 tsp Freeze Dried Garlic (or garlic powder)
1 tsp Chef's Choice Seasoning
½ tsp Freeze Dried Italian Seasoning Blend
½ tsp Freeze Dried Basil
2 TBSP Mixed Bell Peppers
¼ cup Freeze Dried Onions
¾ cups Freeze Dried Sausage
2 cups Rainbow Farfalle (Bowtie) Noodles

To prepare:
 Bring 8 cups of water to boil. Add contents of jar and stir well. Simmer for about 10-12 minutes or until the noodles are done. Top with Parmesan or Mozzarella Cheese.

Ideas for Black Friday--GIFTS!!!!

Every year you do it.  Try to figure out what on earth to get for:
  • your kids' teachers
  • your neighbors
  • your friends
  • your coworkers
  • surprise visitors bearing gifts

We have SO many things.  Why get someone yet another trinket?  Why give yet another plate of goodies that will just go bad in a week or so?

Why not give something that they can actually use....and use up?!?!

I have a few good ideas for gifts that you can give.  Our pantry can sizes are the PERFECT size for gift giving.  And when you order these items by the case, you'll save even more money during the Black Friday sale!  The sale goes live for the public on Wednesday November 23, but you can preorder through me on Tuesday (contact me at gimmethrive (at) gmail (dot) com).


My family LOVES to make all sorts of cookies out of our Classic Cookie Dough Mix.  Just add butter and water and whatever else you want:  chocolate chips, toffee bits, nuts, etc.  And I love making quick sugar cookies out of our Vanilla Sugar Cookie Mix!  (I also like to frost them with homemade buttercream that I've flavored with powdered Thrive strawberries...so good!).  The brownies and the macaroons are JUST ADD WATER MIXES!!!  And the macaroons are gluten free!!!  

The point is, these are great to give because then people can decide when THEY want to have them!


Our bread dough mixes come out perfect EVERY time!  I love them.  I can make them into rolls, loaf bread, pizza crust, cinnamon rolls!  They're very versatile.  They are just add water and yeast mixes.  Our cornbread mix is a tasty way to add cornbread slices or muffins to a hearty meal.  And it's a JUST ADD WATER mix!!!


If there's any beverage synonymous with the holiday season, it's cocoa!!!  
So many people absolutely LOVE these yogurt bites--they are addictive!!!  We have so many flavors to choose from but my personal favorites are Pomegranate and Vanilla....and they are AMAZING sprinkled in our cocoa!!!


Now if you're a parent of adult kids and grandkids, maybe you're looking to give the gift of preparation!  I know of several parents and grandparents who have given long-term food storage to their families for a Christmas gift.  It can often be hard for young families to budget for long term food storage so this is a FANTASTIC idea for a meaningful gift!

Jar Meals: Firecracker Chicken Casserole

I love soups and stews.  I do.

But I love when I find a jar meal recipe that is something other than a soup or stew.

And what's great about this particular jar meal is that it reminds us very much of one of our favorite restaurant apps....the Firecracker Chicken Wraps from Longhorn Steakhouse!

Lots of uses for this dish.  You can eat it atop rice with veggies.  You can stuff it into taco shells, tortillas, or tortilla boats (like in the pic).  You can use it as a dip with tortilla chips.

Have some fun with it!


Ingredients:
2 cup of Thrive Chopped Chicken - Freeze Dried
1 cup Thrive Veloute (Rich Chicken Gravy Sauce)
1/2 cup Thrive Sour Cream Powder
3 tsp. ground cumin
2 tsp. chili powder
1/2 cup. Thrive Green Chilies - Freeze Dried
1/2 cup Thrive Chopped Onions - Freeze Dried

Directions;
In a clean, dry quart jar layer the ingredients in the order listed, tamping down when necessary to accommodate each layer. Place lid on and store to use within a month or so. For longer storage, seal with a vacuum sealer.

To prepare:
Pour the jar contents into a bowl and add 1 1/2 to 2 cups of water.  You want it moist but not loose.  Let it sit in the bowl for 10 minutes.

To use as a casserole:  Spray a 2 quart casserole dish with nonstick cooking spray.  Spread the mixture evenly in the pan.  Top with grated cheddar cheese.  Bake at 350 degrees for 15-20 minutes.

Jar Meals: Grandpa's Chili

No other dish reminds me of my Grandpa Davis more than this chili and I was so excited to transform it into a jar meal with Thrive!

Serve it over a warm slice of cornbread....mmmm....heaven.

I don't like super spicy things and I'd call this about a medium for heat.

Makes about 5 1/2 cups of chili.

Ingredients:
1 1/3 c. THRIVE Ground Beef (Hamburger) - Freeze Dried
 2/3 c. THRIVE Chopped Onions - Freeze Dried
 1/4 c. THRIVE Tomato Powder
 2 1/2 tbsp. Chili Powder
 2 tsp. THRIVE Iodized Salt
 1/4 tsp. ground black pepper
 1/8 tsp. ground red pepper (cayenne)
 1/4 tsp. ground cumin
 1/4 tsp. Dried Oregano
 1/2 c. THRIVE Mixed Bell Peppers
 2/3 c. THRIVE Tomato Dices - Freeze Dried
 2/3 c. THRIVE Instant Pinto Beans

Directions:

To cook the chili:
1. Pour 6 cups of water into a large pot or Dutch oven. Pour contents of jar meal into water and stir well to combine.
2. Bring to a boil; reduce heat and simmer for 15 minutes, stirring frequently.
3. Remove from heat, cover with lid, and allow to sit for 5 minutes before serving.

Jar Meals: Taco Soup

One of THE most popular jar meal recipes, Taco Soup is delicious!  Several variations of it exist but this one is simple and delicious.

To change it up a bit you can serve it with tortilla chips or in a bread bowl.  I love to have shredded cheddar, sliced avocado, and sour cream as yummy additions to this hearty soup.



Ingredients:
3 Tbsp. taco seasoning
1/2 tsp. salt
1/4 tsp. pepper
3 Tbsp. THRIVE Tomato Powder
1/4 c. THRIVE Chopped Onions - Freeze Dried
3/4 c. THRIVE Ground Hamburger - Freeze Dried
3/4 c. THRIVE Instant Pinto Beans
3/4 c. THRIVE Instant Black Beans
3/4 c. THRIVE Sweet Corn - Freeze Dried
2 Tbsp. THRIVE Green Chili Peppers - Freeze Dried

Directions:
1.  Layer ingredients in order into a clean, dry glass quart jar.
2.  Put on the lid and store in a cool, dark spot in your kitchen or pantry.   (see the Jar Meal page for info on long term storage of jar meals.)

To Use:
1.  Add 8 cups water (you may like less for a thicker, chili-like soup) to a pot. 
2.  Pour in jar meal ingredients, stir well, and bring to a boil.
3.  Turn down heat and let simmer for 15-20 minutes, or until beans are cooked through.

The best way to prep jar meals is in bulk; here are the amounts for ordering if you want to make 15 jar meals of the Taco Soup.

Order these items from me:  (FD = freeze dried
1 pantry can of Tomato Powder
1 pantry can of Chopped Onion FD
1 can (#10) of Ground Hamburger FD
1 can (#10) of Instant Pinto Beans
1 can (#10) of Instant Black Beans
1 can (#10) of Sweet Corn FD
1 pantry can of Green Chili Peppers FD

You'll also need salt, pepper, and about 3 cups of taco seasoning.

"Gimme Thrive" Broccoflower Salad

I have a confession to make.  I never really liked cauliflower until I started using Thrive's cauliflower.  Now I LOVE it!

This tasty salad is so easy and is a nice fresh, green side dish that incorporates cauliflower and broccoli and another Thrive favorite....peas!

Take it to a potluck, picnic, barbecue, whatever.  The bacon in it will tempt the cruciferous-wary in the crowd!


Ingredients:
2 c. THRIVE Broccoli - Freeze Dried
2 c. THRIVE Cauliflower- Freeze Dried
1/2 c. THRIVE Celery - Freeze Dried
1 c. THRIVE Green Peas - Freeze Dried
1 1/2 c. cooked, chopped bacon
1 c. Mayonnaise
2 tbsp. THRIVE Cane Sugar
1/4 c. THRIVE Shredded Parmesan Cheese - Freeze Dried
1 tsp. apple cider vinegar
 1/4 tsp. THRIVE Iodized Salt
 2 tbsp. THRIVE Chopped Onions - Freeze Dried
 2 tbsp. water


Directions:
1. In a large sieve (or colander with very small holes), combine the broccoli cauliflower, celery, and green peas.
2. Place the colander into a large bowl of warm water. Allow veggies to rehydrate for 10 minutes. Drain.
3. In a medium bowl, combine mayo, sugar, cheese, vinegar, salt, onion, and water. Whisk well to combine.
4. Add the drained veggies and bacon to the mayo mixture and stir to combine well.
Serve immediately or chill until ready to serve.
