Jar Meals: Firecracker Chicken Casserole

I love soups and stews.  I do.

But I love when I find a jar meal recipe that is something other than a soup or stew.

And what's great about this particular jar meal is that it reminds us very much of one of our favorite restaurant apps....the Firecracker Chicken Wraps from Longhorn Steakhouse!

Lots of uses for this dish.  You can eat it atop rice with veggies.  You can stuff it into taco shells, tortillas, or tortilla boats (like in the pic).  You can use it as a dip with tortilla chips.

Ingredients:
2 cup of Thrive Chopped Chicken - Freeze Dried
1 cup Thrive Veloute (Rich Chicken Gravy Sauce)
1/2 cup Thrive Sour Cream Powder
3 tsp. ground cumin
2 tsp. chili powder
1/2 cup. Thrive Green Chilies - Freeze Dried
1/2 cup Thrive Chopped Onions - Freeze Dried

Directions;
In a clean, dry quart jar layer the ingredients in the order listed, tamping down when necessary to accommodate each layer. Place lid on and store to use within a month or so. For longer storage, seal with a vacuum sealer.

To prepare:
Pour the jar contents into a bowl and add 1 1/2 to 2 cups of water.  You want it moist but not loose.  Let it sit in the bowl for 10 minutes.

To use as a casserole:  Spray a 2 quart casserole dish with nonstick cooking spray.  Spread the mixture evenly in the pan.  Top with grated cheddar cheese.  Bake at 350 degrees for 15-20 minutes.
