Jar Meals: Taco Soup

One of THE most popular jar meal recipes, Taco Soup is delicious!  Several variations of it exist but this one is simple and delicious.

To change it up a bit you can serve it with tortilla chips or in a bread bowl.  I love to have shredded cheddar, sliced avocado, and sour cream as yummy additions to this hearty soup.



Ingredients:
3 Tbsp. taco seasoning
1/2 tsp. salt
1/4 tsp. pepper
3 Tbsp. THRIVE Tomato Powder
1/4 c. THRIVE Chopped Onions - Freeze Dried
3/4 c. THRIVE Ground Hamburger - Freeze Dried
3/4 c. THRIVE Instant Pinto Beans
3/4 c. THRIVE Instant Black Beans
3/4 c. THRIVE Sweet Corn - Freeze Dried
2 Tbsp. THRIVE Green Chili Peppers - Freeze Dried

Directions:
1.  Layer ingredients in order into a clean, dry glass quart jar.
2.  Put on the lid and store in a cool, dark spot in your kitchen or pantry.   (see the Jar Meal page for info on long term storage of jar meals.)

To Use:
1.  Add 8 cups water (you may like less for a thicker, chili-like soup) to a pot. 
2.  Pour in jar meal ingredients, stir well, and bring to a boil.
3.  Turn down heat and let simmer for 15-20 minutes, or until beans are cooked through.

The best way to prep jar meals is in bulk; here are the amounts for ordering if you want to make 15 jar meals of the Taco Soup.

Order these items from me:  (FD = freeze dried
1 pantry can of Tomato Powder
1 pantry can of Chopped Onion FD
1 can (#10) of Ground Hamburger FD
1 can (#10) of Instant Pinto Beans
1 can (#10) of Instant Black Beans
1 can (#10) of Sweet Corn FD
1 pantry can of Green Chili Peppers FD

You'll also need salt, pepper, and about 3 cups of taco seasoning.

"Gimme Thrive" Broccoflower Salad

I have a confession to make.  I never really liked cauliflower until I started using Thrive's cauliflower.  Now I LOVE it!

This tasty salad is so easy and is a nice fresh, green side dish that incorporates cauliflower and broccoli and another Thrive favorite....peas!

Take it to a potluck, picnic, barbecue, whatever.  The bacon in it will tempt the cruciferous-wary in the crowd!


Ingredients:
2 c. THRIVE Broccoli - Freeze Dried
2 c. THRIVE Cauliflower- Freeze Dried
1/2 c. THRIVE Celery - Freeze Dried
1 c. THRIVE Green Peas - Freeze Dried
1 1/2 c. cooked, chopped bacon
1 c. Mayonnaise
2 tbsp. THRIVE Cane Sugar
1/4 c. THRIVE Shredded Parmesan Cheese - Freeze Dried
1 tsp. apple cider vinegar
 1/4 tsp. THRIVE Iodized Salt
 2 tbsp. THRIVE Chopped Onions - Freeze Dried
 2 tbsp. water


Directions:
1. In a large sieve (or colander with very small holes), combine the broccoli cauliflower, celery, and green peas.
2. Place the colander into a large bowl of warm water. Allow veggies to rehydrate for 10 minutes. Drain.
3. In a medium bowl, combine mayo, sugar, cheese, vinegar, salt, onion, and water. Whisk well to combine.
4. Add the drained veggies and bacon to the mayo mixture and stir to combine well.
Serve immediately or chill until ready to serve.
